Randy joined the Kitchen staff of Torarica last
September 2003. With his Barbadian background he enriches our
culinary creations. After being in Suriname for one year now,
it’s high time we asked him about his working adventure
here.
Why did you choose Suriname?
It started as a favour. I met Jose Gaspar, F&B Manager Torarica,
in Barbados for a training period. He helped me out a lot and
we stayed in touch after this period. He contacted me for a job
offer in 2001 but I was busy with other exchange projects and
education. In 2003 the timing was better and I came to Suriname.

What’s your job description?
My
job is to control the operations of the main kitchen. I’m
implementing new structure plans for better development future
wise. I’m trying to change it from a one persons job to
teamwork. Employees should get the chance to be more independent,
initiative and creative. Other restaurants in Suriname have more
variety then Torarica, but Torarica has more potential. And with
more potential you’ll get a lot more variety if you use
it good.
What was your first impression?
I
got the feeling of going “back in time”. A lot
of things here in Suriname are the way things used to be many
years ago in Barbados .
What is the main difference
between Suriname and your hometown at work?
Here you have somebody
for everything. In Barbados we use the advantages of outsourcing.
After staying here for almost a year, I do understand that
the quality of out sourcing isn’t
guaranteed in Suriname . Lackadaisical management is also something
that I observe in Suriname . Companies hold on to old structures
and memories. Working in Suriname is less stressful though and
I really like the attention in restaurants and other outlets
for the local food.
What about the cultural and social differences?
Barbados
doesn’t really have it’s own culture.
In Suriname there’s so much culture and history. The local
people are very friendly and hospitable; it’s like one
big family.
Do you also recognize similarities?
Yes,
everybody minds your business! Happy and friendly people just
like in Barbados .
What do you do when you are off work?
I
stay in my room and watch TV or chill with friends. Of course
I also check out other restaurants.
What is your advice to people
who are considering coming to Suriname ?
Come
with an open mind and a lot of patience.
